Modifications I made:
I used skinless, boneless, chicken thigh instead of shredded rotisserie chicken, but that would make for a super fast dinner!

I also reduced the amount of butter from 6 tbsp to 5 because rendering the chicken thighs increases the amount of fat in the pan.

To cook the thighs, I use 1 tbsp of butter, when it's bubbling and hot I add my seasoned chicken thighs (I used one large package, but you want to aim for around 2 cups of cooked chicken and because it shrinks down, you'll need quite a bit more chicken than what you start with raw). I cook about 5-6 minutes per side, until it's nicely browned and the internal temperature is 175 degrees fahrenheit.

After cooking the chicken thighs, add your butter, onion, and celery to the pan and soften. The liquids from the onions and celery will allow you to deglaze the browned bits from the pan which adds a ton of flavor to your gravy!

And as usual, I used chicken bone broth instead of regular chicken stock. It improves the taste and texture so much, I definitely recommend trying this!

I think these are the only modifications I made, but I did also forget to add the egg wash. This would have yielded in a more golden and glazed puff pastry.

This dish was delicious! I highly recommend trying it! Sebastian and I ate the entire thing in two days.
